Recipe: Tunisian Inspired Stew

Tunisian Inspired Stew


Ingredients

  • 1 lb of beef or lamb cubes
  • 1 onion
  • 6 cloves garlic
  • 1 1/2 Tbsp of Turquoise Legend Tunisian Tabil
  • 1 bunch of fresh parsley, finely chopped
  • 3 tomatoes
  • 2 carrots
  • 2 red bell peppers
  • 2 tbsp extra virgin olive oil
  • 1 box of vegetable broth
  • 1 lemon, juiced
  • 2 tbsp tomato paste
  • 1/2 tbsp kosher salt
  • 1 jalapeño
  • 1 tsp black pepper

     

    Cut the tomatoes into eighths. Cut the onions into quarters. Cut the red bell peppers into quarters. Spread the tomatoes, red bell peppers, garlic and onions on a baking sheet lined with foil that’s been sprayed with oil. Broil at 450 degrees F until slightly charred. This can take anywhere from 20 minutes to 45 minutes, depending on the type of oven. 

    Once the vegetables are nicely charred, blend them up with some vegetable broth and place them in a slow cooker. Next, gently sear the meat and add it to the slow cooker. Chop up and deseed the jalapeño and add it to the slow cooker. Chop up and add the carrots and parsley, as well. Add the Turquoise Legend Tunisian Tabil, kosher salt, black pepper, extra virgin olive oil, lemon juice and tomato paste. Stir it and let it cook on high for about 4 to 5 hours. Enjoy!
